I am not really hungry but this is rather easy to eat if you love goat cheese like I do.

I am waiting on the oven to reach 375. 

35 minutes minimum.

We had the eggplant (going bad quick) and amazing tomatoes from the garden (three big ones). Hubby bought goat cheese , a small and a big log, this week. I used a whole small log for 5 big eggplant slices. 

UPDATE

The oven, ours anyway, really must be at 380 otherwise the eggplant does not cook properly if it is at all thick. I am adding 10 minutes to it at 380.
