It looks like this time the egg white turned soupy. I may have beaten them too long.  We'll see. I am also cooking 3 minutes longer as it is was a bit too wet last time in the deep middle. Billy farts a storm. It reaks. I have smoked about 30 smokes in about 15 hours. Still a bit too high an average. Ideally it would be 30 smokes every 20 hours. 

The pavlova is cooking. I wonder if it will rise at all. It was pretty flat on the pan. Possibly too much vinegar. Or just too long beaten for the egg whites. It usually tastes delicious no matter how much it rises. We still have strawberries and kiwi fruits. And whipping cream.
