Eating my couscous cold made last night. Tomatoes, avocadoes, as much basil as I could chop fresjh, parsley fresh chopped, feta, and walnuts crushed. olive oil.

It lacks lemon and I salted it too much (the tomatoes). The original recipe also included artichoke hearts cubed. This is my healthiest meal I actually need to cook and chop for. Brian aboslutely never ever devoures it like I do.

I think the original orginal recipe used quinoa instead of couscous but couscous is faster.
