It is darn delicious but no socarrat formed at the bottom of the pot this time, a socarrat is a sign of a genuine spanish paella they say. I had one such thick crust in new year's eve paella. Not this time. different rice. basmati this time. I prefer it depsite no crust: less mushy by far than jasmine rice.
