Fennel bulb, onion, tomatoes in a can (I used fire roasted diced tomatoes plus two fresh tomatoes), lemon zest and juice, celery, carrots, baby potatoes, chickpeas, cumin, pepper, thyme and coriander grounded, and green pitted olives.

I am making plain rice with that. It should be tasty. 

Hubby had defrosted vichyssoise for lunch. And I had my sister's goat cheese and eggplants slices recipe.

I was going to buy my veggies at the farmers market tomorrow but I needed them today for this recipe. It is a substantive recipe and I am hungry hungry like a hippo today.
