Cost 40$ to make but I have spare can of coconut milk and mushroom box.
and half a tofu block.
I needed lemongrass stalks, red curry paste, shiitake mushrooms, portobello mushrooms, veggie broth, tofu extra firm, limes for the juice, coconut milk (they said two cans but I used just one) and I think thats it. I am all sweaty from cooking over the hot stove but it is darn delicious broth. Very little tofu ( I put half). But I also put one cup less broth and one can less coconut milk.
I have not cooked for hubby for a while except croque monsieurs, salads and quinoa or breakfast. He does not eat quinoa. i hope he likes the broth. It is filled with delicious shiitake mushrooms, lime juice and red curry paste with coconut milk and tofu tiny cubes.
A bit pricey though when you have to buy everything including the veggie broth and the red paste curry.
but that lasts for 4 months!

*Hubby discarded his tofu after complaining there was not enough stuff in the soup (Its a broth). He is impossible to feed and does not eat most vegetarian things (quinoa, kidney beans, chickpeas, cold salads, tofu, eggplant, okras, pasta etc). If it is not creamy chicken with stuffed brie, he does not want it. But he gets grossed out easily with chicken too. It is super dispiriting as a vegetarian cook. His taste buds are really not developped for all sorts of healthier foods. Too picky.
