Defrosting thai mushroom coconut milk soup

I have not cooked except falafels for a week. We have been living off frozen leftovers.

What could I cook this week? A toscane soup? I better look for new recipes on my new chef's discovery Brita Britnell with Food with feeling. I have just looked at her site: her soup seems good but only tofu for the rest and hubby does not like tofu. Nice eggplant parmesan recipe but hubby does not like eggplants. I may try it for myself the latter though. Maybe a vegetarian french onion soup with red wine.
