Jean Philippe is his first name he goes by. You can find all his recipes online but I have also one of his books. I made General Tso tofu served with rice. He first fries small cubes of tofu, first rolled around in a bowl of   cornstarch. This gives the tofu a wonderful cripsy edge. Then fresh grated ginger (1 tablespoon), garlic (2 cloves), 2 tbspoon of maple syrup, 2 tablespoon of soy sauce, 2 tables spoons of ketchup, quarter cup of broth and green onions.  Cook on simmer for thickening then, reheat the tofu ( 5 minutes)  in the mixture and serve with white rice or any rice.
